Instructions

  1. Heat 3-4 cups vegetable oil in a deep skillet to 350 F; if frying in batches, prepare a foil-lined baking sheet with a cooling rack.

  2. Season 6 chicken breasts with salt and pepper.

  3. Combine 1 cup all-purpose flour, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 teaspoon baking powder in a bag or shallow bowl; coat chicken pieces evenly.

  4. Refrigerate coated chicken for 2-4 hours, then allow it to reach room temperature.

  5. Carefully place chicken in the hot oil. Fry 4-6 minutes per side (8-12 minutes for bone-in) until golden and cooked through, reducing heat to medium-low as it browns.

  6. For batches, transfer cooked chicken to the prepared cooling rack, tent with foil, and fry the remaining chicken.

  7. Serve immediately.
