Crispy Eggplant Fries

Instructions

  1. Heat 2 inches of oil in a deep saucepan to 370 F (188 C).

  2. Peel and slice eggplant into 1/4-inch-thick, 3-inch-long sticks.

  3. Prepare three separate bowls with flour, beaten egg mixed with water, and breadcrumbs.

  4. Season eggplant sticks with salt and pepper.

  5. Dredge eggplant in flour, then egg, and finally coat evenly in breadcrumbs.

  6. Fry coated eggplant in hot oil for 2-3 minutes until golden brown, turning as needed.

  7. Transfer to paper towels to drain, sprinkle with salt, and serve hot with lemon or a dip.
