Crispy Deep-Fried Flounder
Crispy deep-fried flounder is prepared with a cornmeal and pancake mix coating, perfect to serve with fries and tartar sauce.

Instructions

Preheat oven to 200 F.

Soak flounder fillets in milk or buttermilk.

Combine pancake or baking mix and cornmeal in a bowl.

Heat 1 1/2 to 2 inches of oil to 365 F in a deep skillet.

Drain fish, then thoroughly dredge each fillet in the cornmeal mixture, shaking off excess.

Fry fillets in hot oil for approximately 4 minutes total, turning once until golden brown and crisp.

Drain on paper towels and lightly season with salt.

Transfer fried fish to a rack in a baking pan and keep warm in the oven.

Serve hot, optionally garnished with lemon wedges and parsley sprigs.
