Crispy Deep-Fried Flounder

Instructions

  1. Preheat oven to 200 F.

  2. Soak flounder fillets in milk or buttermilk.

  3. Combine pancake or baking mix and cornmeal in a bowl.

  4. Heat 1 1/2 to 2 inches of oil to 365 F in a deep skillet.

  5. Drain fish, then thoroughly dredge each fillet in the cornmeal mixture, shaking off excess.

  6. Fry fillets in hot oil for approximately 4 minutes total, turning once until golden brown and crisp.

  7. Drain on paper towels and lightly season with salt.

  8. Transfer fried fish to a rack in a baking pan and keep warm in the oven.

  9. Serve hot, optionally garnished with lemon wedges and parsley sprigs.
