Creamy Vegan Ambrosia Fruit Salad With Pineapple
A delicious vegan ambrosia combines fruit, coconut, and pineapple with a unique tofu-based dressing.

Toss fruit and coconut in a large bowl, then refrigerate.

In a medium saucepan, combine cornstarch and lemon juice. Add sugar and orange juice, then cook over medium heat, stirring, until thickened (5-10 minutes). Let cool completely.

Fold pureed tofu, orange zest, and optional poppy seeds into the cooled juice mixture and chill for at least 1 hour.

Before serving, pour the dressing over the fruit.
