Instructions

  1. Peel and chop turnips into small chunks; peel and finely chop onions or leeks; chop garlic.

  2. Heat oil or butter in a pot over medium-high heat, add chopped onions or leeks with salt, and cook until soft for about 3 minutes.

  3. Stir in garlic and cook for 1 minute until fragrant.

  4. Add turnips and broth, bring to a boil, then reduce heat and simmer for approximately 10 minutes until turnips are tender.

  5. Blend the soup until very smooth.

  6. Return soup to the pot, stir in cream, and add salt to taste.

  7. Serve hot, garnished with turnip greens or parsley if desired.
