Creamy Spinach Pasta

Instructions

  1. Start boiling 2 quarts of salted water.

  2. Cook pasta to al dente, then drain and set aside.

  3. In a large skillet, cook olive oil and garlic for 1 minute until fragrant.

  4. Add spinach and 1/2 teaspoon salt to the skillet; stir until wilted, cover, and cook for 2 minutes.

  5. Stir in cream, bring to a simmer, cover, and cook for 2 minutes. Add nutmeg and black pepper if desired.

  6. Add cooked pasta, stir to combine and break up any spinach clumps. Cover and cook for 2 minutes for pasta to absorb juices.

  7. Stir in Parmesan cheese. Serve hot with extra Parmesan.
