Creamy Slow Cooker Sausage Stew

Instructions

  1. Grease a 4-quart or larger slow cooker insert.

  2. Combine cubed potatoes, chopped onion, red and green bell peppers, celery, carrots, and sausage in the slow cooker.

  3. In a small bowl, mix olive oil with basil, salt, pepper, and garlic powder; add to the slow cooker with the potato soup and stir to coat.

  4. Cover and cook on high for 2.5 to 3 hours or on low for 6 hours, until vegetables are tender.

  5. Whisk cornstarch with cold water until smooth, then stir into the stew along with the cream.

  6. Cover and cook for another 5 minutes, until the stew bubbles and thickens.

  7. Taste and adjust seasonings as needed.
