Instructions

  1. In a medium saucepan, melt butter over medium heat; sauté mushrooms until golden if using.

  2. Stir flour and seasonings into the butter, cooking for 2 minutes.

  3. Gradually whisk in half-and-half and sherry, cooking constantly until the sauce is smooth and thick.

  4. Whisk one-third of the hot cream sauce into beaten egg yolks, then return the mixture to the saucepan and blend.

  5. Heat the sauce to 175 F, or until it coats a spoon.

  6. Add shrimp and stir constantly until heated through.

  7. Serve over puff pastry shells, rice, angel hair pasta, or toast.
