Creamy Seafood Newburg

Instructions

  1. Shell and devein shrimp; rinse thoroughly.

  2. Chop large shrimp coarsely, then combine with lobster, scallops, or crabmeat, sherry, lemon juice, and nutmeg in a large bowl.

  3. Refrigerate the seafood mixture for 45 to 60 minutes.

  4. Melt butter in a medium saucepan over medium-low heat.

  5. Stir in flour and cook for 3 minutes.

  6. Gradually whisk in half-and-half and salt, cooking until the mixture bubbles and thickens.

  7. In a separate bowl, whisk heavy cream with egg yolk.

  8. Gradually whisk the cream mixture into the thickened sauce.

  9. Stir in cheese until melted.

  10. Add the marinated seafood to the sauce and cook for 10 minutes, or until thoroughly cooked.

  11. Serve over toast, puff pastry, rice, noodles, or biscuits.

  12. Garnish with paprika or fresh parsley, if desired.
