Instructions

  1. Preheat the oven to 400 F and butter a 2-quart casserole dish.

  2. Bring 2-3 inches of water to a boil, then add onions, sliced potatoes, and 1 tsp salt; cover and boil for 5 minutes, then drain.

  3. In the same saucepan, melt butter, then blend in flour, pepper, and the remaining 1 tsp salt, cooking for 2 minutes while stirring.

  4. Gradually stir in milk, cooking and stirring constantly until thickened, then add parsley.

  5. Combine the potatoes with the white sauce, transfer to the baking dish, and bake uncovered for 35 minutes.

  6. Sprinkle cheese and paprika over the potatoes, then bake for another 3-6 minutes until the cheese melts.
