Creamy Scalloped Potatoes With Bacon

Instructions

  1. Preheat the oven to 350 F and generously butter a 2-quart baking dish.

  2. Cook bacon in a deep skillet until crisp, then remove and drain, leaving 2 tablespoons of drippings.

  3. Add 3 tablespoons of butter to the drippings, then sauté the onion until softened.

  4. Stir in flour for 1 minute, then gradually add milk and cook, stirring constantly, until the sauce thickens.

  5. Mix in salt, pepper, nutmeg if using, and the cooked bacon.

  6. Layer half of the potato slices in the prepared dish, top with half of the sauce, then add the remaining potatoes and sauce.

  7. Cover the dish tightly with foil and bake for 1 hour.

  8. Remove the foil and bake for an additional 20 to 30 minutes, or until the potatoes are fork-tender.
