Creamy Potato Soup With Ham

Instructions

Melt butter in a large saucepan over medium-low heat.

Add onion, celery, carrots, and ham; cook, stirring, until onions soften, about 5 minutes.

Stir in garlic and cook for 1 to 2 minutes more.

Add vegetable broth, water, and potatoes; cover and cook for about 25 minutes, until potatoes are tender.

Whisk flour into heavy cream until smooth.

Stir the cream-flour mixture into the hot soup, then add half-and-half or milk.

Season with salt and pepper to taste; continue cooking until the soup is hot.

Slightly mash the potatoes with a masher or fork to thicken; add more milk if the soup is too thick.

Serve garnished with parsley, green onions, chives, or shredded cheese.
