Creamy Potato Soup With Ham

Instructions

  1. Melt butter in a large saucepan over medium-low heat.

  2. Add onion, celery, carrots, and ham; cook, stirring, until onions soften, about 5 minutes.

  3. Stir in garlic and cook for 1 to 2 minutes more.

  4. Add vegetable broth, water, and potatoes; cover and cook for about 25 minutes, until potatoes are tender.

  5. Whisk flour into heavy cream until smooth.

  6. Stir the cream-flour mixture into the hot soup, then add half-and-half or milk.

  7. Season with salt and pepper to taste; continue cooking until the soup is hot.

  8. Slightly mash the potatoes with a masher or fork to thicken; add more milk if the soup is too thick.

  9. Serve garnished with parsley, green onions, chives, or shredded cheese.
