Creamy Mashed Cauliflower and Leeks

Instructions

  1. Coarsely chop cauliflower, place in a saucepan, cover with water and 1 teaspoon salt, then bring to a boil; simmer covered for 10-12 minutes until tender and drain.

  2. While cauliflower cooks, trim leeks, halve lengthwise, rinse thoroughly, and thinly slice.

  3. Melt butter in a large skillet over medium heat, add sliced leeks, and cook on medium-low for 7-10 minutes until very soft, stirring frequently.

  4. Stir in garlic and cook for 2 more minutes.

  5. Combine drained cauliflower, cooked leeks, and heavy cream in a food processor or with an immersion blender; blend until smooth.

  6. Season with salt and pepper to taste.

  7. Serve the mashed cauliflower in a bowl.
