Creamy Italian Zabaglione

Instructions

  1. Set up a double boiler.

  2. Beat egg yolks and sugar until the mixture is pale yellow.

  3. Beat in Marsala, then cook the mixture over the double boiler, stirring continuously until thickened; do not let it boil.

  4. Remove from heat and cool until warm. Optionally, fold in a firmly beaten egg white.
