Instructions

  1. Start boiling water in a pot, then generously salt and cook spaghetti until al dente; reserve 1/4 cup of pasta water, then strain and rinse the spaghetti.

  2. In a large skillet, heat butter and olive oil over high heat, then reduce to low and cook minced garlic until fragrant.

  3. Whisk in heavy cream, then gradually add cream cheese, Pecorino Romano, 1/2 cup Parmesan, and Asiago cheeses until the sauce is thick.

  4. Add the cooked spaghetti and reserved pasta water to the sauce.

  5. Season with salt and pepper, then cook and toss for 2 minutes until the pasta is coated; serve topped with chopped parsley and the remaining 1/4 cup Parmesan cheese.
