Creamy Chicken a la King

Instructions

In a skillet, melt 1 tablespoon butter and sauté mushrooms and green pepper until tender.

Stir in chicken and pimiento, then set the mixture aside.

In a separate saucepan, melt 1/4 cup butter over low heat, then stir in flour until smooth and bubbly.

Gradually whisk in chicken broth, cooking and stirring until the sauce thickens and bubbles.

Add the reserved chicken and sautéed vegetables to the sauce, then season with salt and pepper.

Heat cream in another saucepan until hot, then quickly whisk it into beaten egg yolks.

Stir the egg yolk mixture into the chicken mixture and heat thoroughly over low heat without boiling.

Serve hot over toast, pastry shells, or rice.
