Instructions

  1. Preheat the oven to 200 F.

  2. Season chicken with salt, pepper, and a light dusting of flour.

  3. In a skillet, heat 2 tablespoons butter and olive oil over low heat. Sauté chicken and green onions, turning frequently, for 15-20 minutes until golden and tender.

  4. If using bone-in chicken, sear skin-side down first and cook an additional 10-15 minutes until juices run clear.

  5. During cooking, baste chicken frequently with small amounts of bourbon until evaporated.

  6. Transfer cooked chicken to a warm platter and keep warm in the oven.

  7. Add sliced mushrooms and remaining butter to the skillet; sauté for 3 minutes.

  8. Stir in heavy cream, scraping up any browned bits. Simmer until hot and thickened, then season to taste.

  9. Pour sauce over chicken for serving.
