Instructions

  1. Preheat oven to 350 F.

  2. Combine 2 cups crushed graham crackers, 1/2 cup melted unsalted butter, and 1/4 cup granulated sugar in a large bowl.

  3. Press the mixture into the bottom and halfway up the sides of a 10-inch springform pan; line the pan's exterior with foil and place it on a baking sheet.

  4. In a separate bowl, beat 16 ounces cream cheese and 3/4 cup granulated sugar until smooth.

  5. Stir in 3/4 cup sour cream, 4 large eggs, 1 1/2 cups mashed bananas, and 2 teaspoons lemon juice until just blended.

  6. Pour the filling into the prepared pan and bake for 50 to 60 minutes, or until the center is mostly set.

  7. Cool the cheesecake to room temperature, then wrap and chill for at least 4 hours.

  8. Garnish with whipped cream, banana slices, and cinnamon if desired before serving.
