Creamed Yuca (Cassava) With Roasted Garlic

Instructions

  1. Preheat the oven to 450 F.

  2. Prepare the garlic by peeling its outer skin, cutting 1/2 inch from the top to expose cloves, drizzling with olive oil on foil, and wrapping tightly.

  3. Bake the garlic for 1 hour; once cooled, squeeze the roasted cloves into a bowl.

  4. While garlic bakes, peel and cube the yuca.

  5. Place yuca in a saucepan, cover with water, add 1 to 2 teaspoons of salt, and bring to a boil; reduce heat, cover, and simmer for 20 minutes until tender, then drain.

  6. Combine cooked yuca, half-and-half, butter, and roasted garlic in a bowl.

  7. Mash or whip the mixture until smooth, then season with nutmeg, salt, and pepper to taste.
