Creamed Swiss Chard With Bacon

Instructions

  1. Wash and prepare chard by slicing stems thinly and chopping leaves into pieces.

  2. Steam or boil chard stems for 5 minutes, then add leaves and cook until wilted, about 4 minutes longer.

  3. Drain chard well, squeezing out excess moisture.

  4. In a saucepan, cook diced bacon until crisp; remove and set aside.

  5. Add onion and garlic to the same saucepan and cook until tender.

  6. Stir in the cooked chard and reserved bacon; set aside.

  7. Melt butter in a separate saucepan, then stir in flour until smooth.

  8. Whisk in half-and-half or milk and nutmeg; cook, stirring, until thickened. Season with salt and pepper.

  9. Add half of the sauce to the chard mixture, stirring to combine.

  10. Stir in additional sauce as desired.
