Creamed Swiss Chard With Bacon

Instructions

Wash and prepare chard by slicing stems thinly and chopping leaves into pieces.

Steam or boil chard stems for 5 minutes, then add leaves and cook until wilted, about 4 minutes longer.

Drain chard well, squeezing out excess moisture.

In a saucepan, cook diced bacon until crisp; remove and set aside.

Add onion and garlic to the same saucepan and cook until tender.

Stir in the cooked chard and reserved bacon; set aside.

Melt butter in a separate saucepan, then stir in flour until smooth.

Whisk in half-and-half or milk and nutmeg; cook, stirring, until thickened. Season with salt and pepper.

Add half of the sauce to the chard mixture, stirring to combine.

Stir in additional sauce as desired.
