Cream of Green Chile Soup Recipe

Instructions

  1. Roast chiles until browned, then cool for 15 minutes; peel, remove stems and seeds, collecting any juices in a bowl.

  2. Chop onion and garlic. In a medium pot, melt butter over medium-high heat. Sauté onion and salt for 3 minutes until soft, then add garlic and cook for another minute until fragrant.

  3. Add prepared chiles and 3 to 4 cups of broth to the pot. Bring to a boil, then reduce heat to a simmer for 15 minutes until vegetables are very soft.

  4. Blend the soup mixture until super smooth and velvety, ensuring at least 2 minutes of blending.

  5. Return the blended soup to the pot, stir in cream, and gently heat through. Season with additional salt to taste.
