Cream Cheese Stuffed Chocolate Cookies

Instructions

Preheat oven to 350 F and position 2 racks in the upper and lower third.

Whisk flour, cocoa powder, baking soda, and salt in a bowl, then stir in chocolate chips.

In a separate bowl, whisk egg, yolk, corn syrup, and vanilla.

Beat butter, shortening, and sugars in a stand mixer until light, then blend in the egg mixture.

Slowly add the dry ingredients to the mixer on low speed, then finish mixing by hand with a spatula.

Scoop 36 portions (2 tbsp each) onto parchment-lined sheets and flatten into 2.5-inch discs. Refrigerate for 1 hour.

While dough chills, whisk softened cream cheese, confectioners' sugar, and salt for the filling. Refrigerate.

Remove dough discs, place 2 teaspoons of filling on each, then stretch dough to enclose the filling and roll into a ball.

Roll each cookie ball in granulated sugar and return to sheets. Freeze for 1 hour.

Bake cookies for 10 to 12 minutes, rotating sheets halfway, until tops are dry and slightly crinkly.
