Instructions

  1. Preheat oven to 400 F and prepare a 12-cup muffin pan by spraying or lining cups.

  2. Combine oats and milk in a small saucepan and bring to a boil.

  3. Remove from heat, stir in butter until melted, and set aside to cool.

  4. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.

  5. Stir eggs into the cooled oat mixture until blended.

  6. Add the oat mixture to the flour mixture; stir until just blended.

  7. Fold in cranberries and nuts, being careful not to overmix.

  8. Spoon batter into the prepared muffin cups.

  9. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

  10. Cool muffins in the pan on a wire rack for 5 minutes, then remove and cool completely on the rack.
