Cracker Barrel Meatloaf

Instructions

Preheat the oven to 350 F and line a baking dish with foil.

Finely crush 1 1/2 cups of crackers.

Combine ground beef, cracker crumbs, cheese, bell pepper, onion, milk, eggs, salt, and pepper in a large bowl.

Mix until just combined.

Form into a firm loaf, place in the prepared pan, and bake for 30 minutes.

Whisk together ketchup, brown sugar, and mustard for the glaze.

After 30 minutes, remove the meatloaf, spread the glaze over it, and return to the oven.

Bake for another 30-35 minutes, or until the internal temperature reaches 160 F.

Let the meatloaf rest for 15 minutes before slicing.
