Crab Stuffed Potatoes

A rich crab-stuffed potato makes an excellent appetizer, side dish, or elegant snack.

Instructions

  1. Preheat the oven to 350°F, placing foil on the bottom rack.

  2. Scrub and dry potatoes, then rub with olive oil and salt. Prick them and place on the top rack.

  3. Bake for 60-70 minutes until fork-tender, then cool on a rack.

  4. Meanwhile, combine crabmeat with lemon juice, seasoning, and minced garlic.

  5. Melt butter in a skillet, add the crab mixture, and cook for 3-4 minutes, stirring.

  6. Slice potatoes lengthwise and scoop out the flesh, leaving thin shells.

  7. Mash the potato flesh with chives and sour cream, then fold in the crab mixture and season.

  8. Preheat the broiler to high. Fill lightly oiled potato shells with the mixture, then sprinkle with cheese and chives.

  9. Broil for 3-5 minutes until the cheese is browned.
