Instructions

  1. Preheat the oven to 350 F and line a large baking sheet with parchment paper, then lightly spray it.

  2. Remove mushroom stems, finely chop them, and set aside.

  3. Melt 2 tablespoons of butter and brush it over the mushroom caps.

  4. Melt the remaining 4 tablespoons of butter in a saucepan over medium heat; add the chopped stems, green onions, and red bell pepper, cooking for 3 to 5 minutes until tender.

  5. Combine the cooked vegetable mixture with crabmeat, breadcrumbs, Cajun seasoning, salt, and pepper.

  6. Fill each mushroom cap with the stuffing, mounding it.

  7. Sprinkle Parmesan cheese over each filled mushroom cap.

  8. Bake for 15 to 20 minutes, until the crab stuffing is hot and mushroom caps are tender, then serve.
