Cowboy Beans With Ground Beef
A hearty one-pot cowboy bean dish features ground beef, bacon, and various sauces, ideal as a barbecue side or a satisfying main course.

Preheat the oven to 350F.

Cook 1/2 pound diced bacon in a Dutch oven until crisp, then remove and drain it.

Drain bacon drippings, then brown 1 pound ground beef in the same pot, breaking it up.

Add 1/2 cup chopped onion and cook until tender, then drain any excess fat.

Stir in 1/4 cup ketchup, 1/4 cup barbecue sauce, 1/4 cup granulated sugar, 1/4 cup packed brown sugar, 2 tablespoons molasses, 1 tablespoon chili powder, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, 2 tablespoons mustard, and all the beans.

Sprinkle the reserved bacon over the bean-beef mixture.

Bake covered for 45 minutes until warmed through.

Top with 1 cup shredded cheddar cheese, if desired, and bake uncovered for 5 minutes until melted.
