Couscous Belboula (Barley Couscous) Recipe

Barley couscous is prepared by steaming coarse barley grits through a multi-stage process in a couscoussier.

Instructions

  1. In a large bowl, thoroughly mix dry barley couscous with oil, then add 2 cups of water, breaking up any clumps; allow to rest for 10 minutes.

  2. Transfer the barley to a steamer basket, place it on the couscoussier, seal, and steam for 15 minutes after steam begins to rise.

  3. Return the steamed barley to the bowl, break it apart, then mix in 2 cups of water and 2 teaspoons of salt, breaking any clumps; let rest for 10 minutes.

  4. Return the barley to the steamer for a second 15-minute steaming cycle.

  5. After the second steaming, transfer the barley back to the bowl, break it apart, then mix in 2 cups of water and let it rest for 10 minutes.

  6. Add another 2 cups of water to the barley and allow it to rest for a few minutes for absorption.

  7. Steam the barley for a third time for 10 to 15 minutes.

  8. Serve by transferring the barley couscous to a large bowl and tossing with butter and broth.
