Country-Style Pinto Bean Bake

Instructions

  1. Preheat the oven to 325 F.

  2. Rinse pinto beans thoroughly.

  3. Bring 1 1/2 quarts of water to a boil in a large pan, remove from heat, add beans, cover, and let soak overnight.

  4. The following day, simmer the soaked beans for about 1 hour until tender, then drain, reserving 1/2 cup of the cooking liquid.

  5. Sauté diced onion and green pepper in bacon drippings for 5 minutes.

  6. Layer the cooked beans, sautéed vegetables, and diced ham in a 2-quart casserole.

  7. Mix the reserved bean liquid with the remaining sauce ingredients, then pour over the bean mixture.

  8. Bake covered for 45 minutes, then uncovered for another 15 to 20 minutes.
