Country-Style Baked Beans

A classic slow-baked bean dish, prepared with either navy or yellow-eye beans, features a rich flavor from salt pork, brown sugar, and ketchup.

Instructions

  1. Preheat the oven to 275 F.

  2. Rinse and sort the beans, discarding any imperfect ones, then cover them with water in a saucepan. Bring to a boil for 2 minutes, then cover and let stand for 1 hour.

  3. Add more water to cover the beans, bring to a boil, then reduce heat and simmer for 1 hour until tender.

  4. Drain the beans, reserving the cooking liquid.

  5. Layer half of the beans in a casserole dish, sprinkle with half of the chopped onion, then add the diced salt pork, remaining beans, and the rest of the onion.

  6. In a separate bowl, combine the salt, pepper, mustard, brown sugar, 1.5 cups of the reserved bean cooking liquid, and ketchup. Pour this mixture over the beans, adding enough additional water to cover them.

  7. Cover the dish and bake for approximately 6 hours, removing the cover for the final 25 minutes.
