Country Fried Steak
A crispy and delicious country fried steak, smothered in rich brown gravy, makes for a satisfying meal at any time.

Preheat oven to 200 F.

Whisk buttermilk, eggs, 1 teaspoon salt, and 1 teaspoon pepper; submerge cubed steaks in this mixture and refrigerate for at least one hour.

Combine flour, remaining salt, pepper, onion powder, and paprika in a shallow dish, reserving 2 tablespoons for the gravy.

Dredge each steak first in the flour mixture, then buttermilk, then flour again; place on a cooling rack and refrigerate for 30 minutes.

Heat oil to 350 F in a large skillet; fry steaks 3 to 4 minutes per side, then transfer to a clean cooling rack and keep warm in the oven.

For the gravy, add butter to the remaining oil, then whisk in the reserved flour and cook until lightly browned for 2 to 3 minutes.

Gradually whisk in beef broth and hot sauce; bring to a boil, then reduce heat and simmer for 3 minutes.

Serve steaks immediately, topped with the prepared gravy.
