Instructions

  1. Preheat oven to 200 F.

  2. Whisk buttermilk, eggs, 1 teaspoon salt, and 1 teaspoon pepper; submerge cubed steaks in this mixture and refrigerate for at least one hour.

  3. Combine flour, remaining salt, pepper, onion powder, and paprika in a shallow dish, reserving 2 tablespoons for the gravy.

  4. Dredge each steak first in the flour mixture, then buttermilk, then flour again; place on a cooling rack and refrigerate for 30 minutes.

  5. Heat oil to 350 F in a large skillet; fry steaks 3 to 4 minutes per side, then transfer to a clean cooling rack and keep warm in the oven.

  6. For the gravy, add butter to the remaining oil, then whisk in the reserved flour and cook until lightly browned for 2 to 3 minutes.

  7. Gradually whisk in beef broth and hot sauce; bring to a boil, then reduce heat and simmer for 3 minutes.

  8. Serve steaks immediately, topped with the prepared gravy.
