Country-Fried Round Steak
Prepare classic country-fried steaks featuring tenderized round steak and a rich pan gravy.

Instructions

Heat oil to 350 F in a heavy skillet.

Trim excess fat from steak; pound to 1/4-inch thickness.

Cut steak into serving pieces.

Whisk eggs with lemon zest, juice, salt, and pepper.

Combine bread crumbs and cracker crumbs.

Dip steak into egg mixture, then dredge in crumb mixture.

Cook steaks in hot oil until browned and cooked through, turning once.

Remove steaks and keep warm; pour off all but 2 tablespoons of oil from skillet and set to medium-low heat.

Sprinkle 2 tablespoons flour over the oil; cook, stirring, until lightly browned.

Gradually add 1 cup milk to the roux; cook 2-4 minutes, stirring constantly, then adjust seasonings.

Serve steaks with gravy.
