Country Breakfast Skillet
A satisfying farmer-style breakfast skillet features eggs, bacon, onion, potatoes, and melted cheddar cheese.

Instructions

Cook 6 slices 2-inch cut bacon in a large skillet until crisp, then remove, crumble, and set aside.

Pour off all but 3 tablespoons of drippings from the skillet.

In the retained drippings, cook 1/4 cup chopped bell pepper, 2 tablespoons chopped onion, and 6 cups cubed cooked potatoes until browned.

Stir in 1/2 cup shredded sharp cheddar cheese until melted.

Add 6 beaten eggs and cook, stirring, until set.

Season with salt and pepper, then top with crumbled bacon and serve.
