Instructions

  1. Whisk cottage cheese, oil, and eggs in a bowl.

  2. Combine flour and baking soda in a separate bowl.

  3. Sift the flour mixture into the wet ingredients and whisk until the batter is light, frothy, and lump-free.

  4. Heat a greased non-stick skillet over medium heat.
