Cottage Cheese Kolacky Dough Pastry Recipe

Instructions

  1. Preheat oven to 375 F.

  2. In a large bowl, cut butter into flour, then add cottage cheese and mix until a combined dough forms.

  3. Divide the dough into two equal portions, wrap, and refrigerate for several hours or overnight.

  4. On a lightly floured surface, roll out one dough portion to 1/8-inch thickness.

  5. Cut dough into 2 1/2-inch squares with a pizza cutter and place on an ungreased cookie sheet, spaced 1-inch apart.

  6. Dollop a teaspoon of filling onto each square, then bring two opposite corners to the middle and secure by pinching or overlapping; use egg white to help them stick if necessary.

  7. Bake for 20 minutes or until lightly browned.

  8. Remove from pans and cool completely on a wire rack.

  9. Store in an airtight container and dust with confectioners' sugar before serving.
