Instructions
-
Preheat oven to 350 F. Grease an 8x8-inch baking pan and dust with flour, tapping out excess.
-
In a large bowl, whisk melted butter, oil, and sugars. Add eggs, egg yolk, corn syrup, and vanilla; whisk until creamy (about 5 minutes).
-
In a separate small bowl, combine cocoa powder, flour, and salt.
-
Gradually fold dry ingredients into the wet mixture until just combined.
-
Pour batter into the prepared pan and spread into an even layer.
-
Bake for 20-25 minutes until a toothpick inserted in the center comes out mostly clean.
-
Cool brownies in the pan for 15 minutes, then loosen edges and invert onto a parchment-lined rack to cool completely (about 45 minutes).
-
For the ganache, heat cream in a microwave-safe bowl for 30 seconds. Stir in corn syrup, vanilla, and salt.
-
Add chocolate chips, let sit 1 minute, then stir. Microwave in 15-20 second intervals, stirring between, until smooth and shiny.
-
Pour and spread ganache evenly over the cooled brownies.
-
Sprinkle with colorful candy bits, then refrigerate until the ganache is set. Slice into 16 brownies.
