Instructions

  1. Warm oil in a large, heavy skillet over medium-high heat.

  2. Rinse and thoroughly pat dry fish fillets.

  3. Prepare two shallow bowls: one with beaten eggs and water, another with whisked cornmeal, salt, and pepper.

  4. Coat each fillet by dipping in the egg mixture, then dredging in the cornmeal mixture.

  5. Add coated fish to the hot oil, ensuring not to crowd the pan, and fry in batches.

  6. Cook each side for 3 to 4 minutes, until the coating is crisp and the fish is opaque.

  7. Drain cooked fish on paper towels and serve immediately.
