Cornmeal Crispy Chicken

Crispy chicken, coated in a seasoned cornmeal and cheese mixture, is quickly cooked on a dual-contact indoor grill.

Instructions

  1. Pound chicken breasts to 1/3-inch thickness.

  2. Beat an egg in a shallow bowl.

  3. In a separate bowl, combine cornmeal, Parmesan cheese, basil, oregano, salt, and pepper.

  4. Brush chicken with lime juice, then dip it in the beaten egg.

  5. Coat chicken with the cornmeal mixture, then let it rest on a wire rack for 20-30 minutes to dry.

  6. Spray a dual-contact indoor grill with nonstick cooking spray.

  7. Cook chicken on the grill for 4-7 minutes, until cooked through (165°F) and the coating is brown and crisp.
