Instructions

  1. Melt butter in a large, heavy skillet over medium heat.

  2. Add chopped onion and sauté until translucent.

  3. Stir in garlic and sauté for 1 minute.

  4. Combine diced potatoes, chopped corned beef, cabbage, and optional carrots.

  5. Mix in thyme, parsley, and pepper.

  6. Season with salt to taste.

  7. Pat the mixture flat and brown for 8 to 10 minutes.

  8. Flip and brown the other side.
