Corned Beef and Noodle Casserole

Instructions

  1. Preheat the oven to 350 F / 180 C / Gas 4 and grease a 2-quart baking dish with 1 tablespoon melted butter.

  2. Boil salted water and cook noodles according to package directions, then drain thoroughly.

  3. In a large bowl, mix the cooked noodles, diced corned beef, shredded cheese, condensed soup, milk, and onion.

  4. If desired, stir in peas or cooked mixed vegetables.

  5. Transfer the mixture to the prepared baking dish.

  6. Toss the breadcrumbs with the remaining 2 tablespoons melted butter and sprinkle over the top.

  7. Bake for 35 to 45 minutes, until the topping is golden and the filling is bubbly and hot.
