Instructions

  1. Preheat the oven to 350 F.

  2. Combine flour, cornmeal, baking powder, sugar, and salt in a large bowl.

  3. Melt butter and allow it to cool to room temperature.

  4. Mix milk, cooled melted butter, oil, and beaten egg.

  5. Grease and flour a muffin pan.

  6. Add liquid ingredients to the dry mix and stir until just moistened; do not overmix.

  7. Spoon batter into the prepared muffin pan.

  8. Bake for 18 to 20 minutes, or until a toothpick inserted into a muffin center comes out clean.
