Instructions

  1. In a large 3 1/2 quart pot, combine corn, onion, celery, garlic, peppercorns, bay leaves, parsley, and water to cover; bring to a boil.

  2. Once boiling, cover, reduce heat to low, and simmer for 2 hours.

  3. Strain the stock, cool completely, and store in airtight jars in the refrigerator.
