Instructions

  1. Preheat the oven to 350°F.

  2. Combine fresh corn and minced onion in a large bowl.

  3. In a separate large bowl, whisk together heavy cream, half-and-half, eggs, egg yolks, sugar, salt, black pepper, and hot sauce.

  4. Fold the corn and onion mixture into the whisked cream and egg mixture.

  5. Pour the combined mixture into a 2-quart baking dish.

  6. Place the baking dish into a larger baking pan with high sides, then add hot water to the larger pan, filling it halfway up the soufflé dish's sides.

  7. Bake for 60 minutes, or until set and the surface is browned.

  8. Remove the soufflé from the oven and water bath, then cool for 10 to 15 minutes before serving.
