Instructions

  1. In a large bowl, combine flour, cornstarch, salt, baking soda, and baking powder.

  2. In a separate bowl, whisk egg, sugar, butter, shortening, and vanilla; then stir in milk, half-and-half, and buttermilk until smooth.

  3. Fold the dry ingredient mixture into the wet ingredient mixture until just combined, leaving some lumps.

  4. Preheat a waffle iron.

  5. Spray the preheated waffle iron with cooking spray and add about 1/2 cup of batter.

  6. Cook each waffle for 4 to 6 minutes until golden brown and crispy; repeat with remaining batter.

  7. Serve immediately with butter and maple syrup.
