Copycat Toast Yay! Cookies Recipe
A copycat rendition of French toast flavored cookies provides an easy-to-make treat for year-round enjoyment.

Instructions

Preheat the oven to 350 F.

Combine butter, confectioners' sugar, flour, cinnamon, baking soda, maple syrup, maple extract, and heavy cream in a mixer; beat until a slightly stiff dough forms and pulls away from the bowl.

Wrap the dough in plastic and chill for at least 30 minutes.

On a lightly floured surface, roll out the dough into a large sheet.

Cut cookie shapes using a toast-shaped cutter; re-roll and cut any remaining dough.

Place cookies on a parchment-lined baking sheet and bake for 10 to 12 minutes, or until lightly golden and firm.

Remove cookies from the oven and allow them to cool.

Melt white chocolate in a heatproof bowl, stirring at 15-second intervals until smooth.

Dip the bottom of each cooled cookie into the melted chocolate, tapping off any excess.

Place chocolate-dipped cookies on parchment or a cooling rack and let the chocolate harden.
