Copycat Toast Yay! Cookies Recipe

Instructions

  1. Preheat the oven to 350 F.

  2. Combine butter, confectioners' sugar, flour, cinnamon, baking soda, maple syrup, maple extract, and heavy cream in a mixer; beat until a slightly stiff dough forms and pulls away from the bowl.

  3. Wrap the dough in plastic and chill for at least 30 minutes.

  4. On a lightly floured surface, roll out the dough into a large sheet.

  5. Cut cookie shapes using a toast-shaped cutter; re-roll and cut any remaining dough.

  6. Place cookies on a parchment-lined baking sheet and bake for 10 to 12 minutes, or until lightly golden and firm.

  7. Remove cookies from the oven and allow them to cool.

  8. Melt white chocolate in a heatproof bowl, stirring at 15-second intervals until smooth.

  9. Dip the bottom of each cooled cookie into the melted chocolate, tapping off any excess.

  10. Place chocolate-dipped cookies on parchment or a cooling rack and let the chocolate harden.
