Copycat Payday Bars

These easy copycat caramel and peanut candy bars feature a sweet core enrobed in salted peanuts, optionally dipped in chocolate.

Instructions

  1. Line a 9x9-inch pan with foil, spray it, then scatter 1 1/2 cups of peanuts evenly on the bottom.

  2. Melt unwrapped caramels and cream or milk in a microwave, stirring every 30-40 seconds until smooth.

  3. Pour melted caramel over the peanuts, spread evenly, then top with the remaining 1 1/2 cups of peanuts, pressing gently to embed.

  4. Refrigerate for at least 30 minutes to set the caramel.

  5. Remove the set candy from the pan; cut into bars if not dipping in chocolate.

  6. For chocolate dipping, melt chocolate candy coating in the microwave, stirring frequently.

  7. Spread a very thin layer of melted chocolate over the top of the uncut candy to secure peanuts.

  8. Refrigerate for 10 minutes, then flip and spread a thin layer of chocolate on the other side.

  9. Once both chocolate layers are set, cut the candy into individual bars.

  10. Re-warm dipping chocolate if needed. Dip each bar into chocolate, place on parchment paper, and optionally sprinkle with chopped peanuts while wet.

  11. Refrigerate until chocolate is fully set, then serve at room temperature.
