Copycat McRib Sandwich

A copycat fast-food style BBQ pork sandwich features tender pulled pork, dill pickles, and chopped onions.

Instructions

  1. Prepare the grill/smoker by lighting organic charcoal with a fire starter and adding a handful of soaked cherry wood chips.

  2. Combine smoked paprika, salt, cumin, white pepper, light brown sugar, chili powder, and ground coffee in a bowl.

  3. Remove membrane from ribs, massage with mustard, and apply the seasoning blend. Wrap ribs tightly and marinate in the refrigerator for at least 6 hours.

  4. Place the convEGGtor (legs up), add a pan with 1 cup water and ½ cup apple vinegar, then the grate and ribs. Close the grill, setting the top vent to 1/4 inch and bottom vent to a little over 1/2 inch.

  5. Monitor the grill for about an hour to regulate temperature.

  6. Cook ribs for 4 hours. Brush with 1/2 cup BBQ sauce, increase heat for a few minutes to set the sauce, then remove, tent with foil, and rest for 30 minutes.

  7. Pull ⅔ cup or more of meat from the ribs and toss with 1 to 2 tablespoons BBQ sauce.

  8. Serve the pulled meat on a Spud Dog Bun, topped with chopped white onion and a dill pickle spear.
