Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.

  2. In a medium pot, melt butter over medium heat, then stir in chopped apple, brown sugar, lemon juice, cinnamon, and salt.

  3. Simmer the mixture for about 10 minutes until the apples soften and most liquid evaporates; cool the filling completely.

  4. On a floured surface, roll out one pie crust to an 8x8-inch square, then cut into eight 2x4-inch rectangles; repeat with the second crust.

  5. Place eight of the rectangles on the prepared baking sheet and brush their surfaces with beaten egg.

  6. Spoon the cooled apple filling onto the center of these rectangles, leaving a 1/4-inch border.

  7. Cover with the remaining eight rectangles, crimp the edges with a fork, then brush with egg wash and sprinkle with granulated sugar; prick the tops with a toothpick.

  8. Bake for 13 to 15 minutes until golden brown, then cool on a wire rack before eating.
