Copycat First Watch Million Dollar Harvest Hash
A popular breakfast spot's signature hash combines roasted sweet potatoes, savory bacon, goat cheese, and a sweet and spicy honey drizzle.

Preheat the oven to 375 F.

Toss 8 oz cremini mushrooms with 1 tbsp neutral oil and 1/2 tsp seasoning salt; spread on half of a large sheet pan.

Peel and slice 1 small sweet potato (8-10 oz) into 1/4-inch half-moons. Toss with 1 tbsp neutral oil and 1/4 tsp seasoning salt; spread on the other half of the sheet pan.

Roast mushrooms and sweet potatoes for 15-20 minutes until tender with brown edges; set aside.

Heat 1 tbsp neutral oil in a large skillet over medium-high heat. Add roasted mushrooms, sweet potatoes, 1 cup shredded kale, and 1/2 cup bacon pieces; stir and heat for 2 minutes.

Concurrently, cook 4 eggs to your preference in a separate nonstick skillet; season to taste.

Add 2 cups prepared frozen diced breakfast potatoes and seasoning salt to the mushroom-sweet potato mixture; heat for 1 minute. Stir in 1/2 cup (2 oz) shredded Jack cheese and cook until melted.

In a small bowl, combine 1 cup baby arugula, 1/4 cup torn fresh goat cheese, 1 tsp lemon juice, 1 tsp chopped parsley, and 1 tsp chopped chives.

Divide the hash between two bowls.

Top with cooked eggs and the arugula-goat cheese mixture.

Drizzle with 1 tbsp hot honey.
