Copycat Chipotle Cilantro Lime Rice

A simple copycat cilantro lime rice, reminiscent of a popular fast-casual chain, is easily made at home and perfect for burritos or tacos.

Instructions

  1. Combine water, rice, oil, and salt in a 3-quart saucepan, then bring to a boil.

  2. Reduce heat, cover, and simmer for 15 to 20 minutes until water is absorbed, then remove from heat and let stand covered for 5 minutes.

  3. Stir in fresh cilantro, lime zest, and lime juice.
